Hock is a cut from the bottom half of the pork leg.

It’s a chunky, 4-inch section of bone surrounded by collagen, connective tissue, and meat,. Cured with salt and smoked, it will lend a bacony flavor to any dish you add it to.

Considered a great addition to long-cooked dishes, such as soups, pots of beans, braised greens, and poultry stocks. Give it time to get tender and you won’t regret it!
