Fresh hock is a thick cut of meat also known as pork knuckle. This cut is unsmoked and is ideal for braising. Cook it any way you like it. Put it on a smoker for a moist and flavorful meal, roast in the oven until crispy, or boil on the stove until the fat dissolves into the stew.  We recommend you to try this Pasta e Fagiole recipe adapted from Bon Appetit.
